There are so many ways to incorporate kimchi into your diet beyond just having it on the side of your plate or in a bowl of bibimbap.  You can use chopped up kimchi or just the brine, depending on the culinary use.  These are great ways to use up kimchi that is getting a little bit old.  If you are using it in a cooking application then you will lose the probiotic benefits, however, it will still provide lots of nutrients and a great deal of flavour.  Be sure to still incorporate it raw in your diet just to ensure you are benefiting from the good bacteria and enzymes it provides.
